Carrot Bran Muffins

Ingredients:

One and a half cups of all purpose flour

One and a half cups of wheat bran

One cup of grated carrots

Half a cup of brown sugar

Two tablespoons of pure maple syrup

Two eggs

One table spoon clarified butter

One teaspoon of  ground cinnamon

One teaspoon of ginger powder

One heaping teaspoon of baking powder

One tablespoon of vanilla extract

Two and a half cups of buttermilk

 

Preheat your oven to bake at 350 degrees F.

Prepare and line your muffin baking pan.

Mix the butter, eggs, brown sugar, and maple syrup together in a large bowl.

Add the buttermilk, ginger powder, cinnamon, vanilla extract and carrots to the mixture and stir well.

Gradually add the wheat bran and flour to the rest of the ingredients and mix everything together well until it forms into a batter.

Pour the batter into each individual muffin tin (2/3 full).

Bake the muffins for approximately 30 to 35 minutes or until they appear to be baked.

This recipe should yield approximately 18 muffins. Enjoy!
