Six cups of chicken or vegetable stock
Two cups of half and half cream
One and a half cups of broccoli (chopped)
One and a half cups of carrots (chopped)
Half of an onion (chopped)
Five garlic gloves (chopped)
One cup of grated white cheddar cheese
One teaspoon of salt
One teaspoon of black pepper
In a large pot heat up the broth along with the onion, garlic, broccoli and carrots on medium to high heat.
Once the vegetables start to soften and are cooked, remove the pot off the heat.
Use a hand mixer or mashing utensil to mash all the vegetables and put the pot back on the heat.
Add the half and half cream, salt, pepper and cheese to the pot and stir all the ingredients well until everything has dissolved together.
You can serve your soup with croutons or crackers and garnish it with some grated cheese.
