One and a half cup cups of coconut milk
Half of a pineapple
Half of a cup of shredded unsweetened coconut
Your choice of chopped nuts and additional shredded coconut for garnish (optional)
Peel and slice the bananas and pineapple and puree them in a food processor. Pour out the pureed mixture into a freezer friendly container. Add the coconut milk and shredded coconut and mix everything together. Cover the container and freeze the ice cream mixture for about six hours before you serve it. If you its too soft, keep it in the freezer for longer.
You can garnish the ice cream with chopped nuts and shredded coconut. Enjoy!
