Quinoa Salad

 

Salad:

One cup of cooked quinoa

One cup of cooked whole lentils

One cup of cooked chick peas/garbanzo beans

Two grated carrots

Two cups of finely chopped broccoli

Two cups of chopped kale

One cup of chopped spinach

Half a cup of dried cranberries

Half a cup of sliced almonds

One third of a cup of sesame seeds

 

Dressing:

One third of a cup of lemon juice

One third of a cup of olive oil

One teaspoon salt

One teaspoon black pepper

 

Combine and mix all the ingredients for the salad except the sliced almonds and sesame seeds.

Mix all the ingredients for the dressing in a separate bowl and then mix the dressing into the salad.

Spread the almonds and sesame seeds evenly over the salad for garnish and mix them well into the salad before serving.

 

This recipe could serve from eight to twelve people. Enjoy!
