Butternut squash soup is a healthy option for comfort food during the cold season. You can make it at home with this simple recipe.
One butternut squash: peeled, pitted and chopped into cubed pieces
Half an onion: peeled and chopped finely
Three garlic cloves peeled and chopped finely
Six sage leaves
One teaspoon of fresh rosemary
3 cups of chicken or vegetable broth
Two cups of water
One quarter cup of half and half cream
One teaspoon salt
One teaspoon black pepper
Two tablespoons of butter
Fresh cilantro for garnish (optional)
To begin the preparation for the soup, first heat up the butter on medium heat in a large pot. Then add the onion and garlic and sauté them well with the butter. After three minutes add the butternut squash to the onion and garlic mixture and mix well. Add the water, mix again and cover the pot and let the ingredients cook for approximately five minutes, still on medium heat.
Then uncover the pot and add the broth, sage leaves, rosemary, salt and pepper and mix well. Once the squash has become soft and appears to be cooked, add the cream and mix it into the soup mixture. After a few minutes, take the soup off the heat and let it cool for about three minutes.
After the soup has cooled for a few minutes, pour the soup mixture into a nutribullet, blender or food processor and puree the mixture until it becomes a thick pureed liquid form. Once your soup is pureed, it is ready to be served. You can use the fresh cilantro for garnish and extra flavor. Bon appétit!
