Bruschetta is an Italian antipasto which makes a great snack or starter. It is healthy dish and simple to make.
One large whole wheat or white baguette
Three to 4 medium hard medium sized tomatoes
Half of a medium sized white onion
Half a cup of cilantro
One cup of fresh grated parmesan cheese
One table spoon fresh or dried basil
One teaspoon salt
One teaspoon black pepper
One to two tablespoons of olive oil (your preference)
First finely chop the tomatoes into small cubes by discarding the soft seeded part inside of the tomato and use the hard outside part. Place the tomato into a large or medium sized bowl. Chop the onion finely into small cubes and add it to the bowl with the tomato. Add the sliced cilantro and parmesan into the mixing bowl as well and start mixing everything together. Add the salt, pepper, basil and olive oil to the bowl and mix it together with the rest of the ingredients. Once it is mixed well, your bruschetta is finished and ready to be served with the bread.
Next, slice up the baguette into round slices, about one to two inches thick. Place them in a baking sheet and toast them in your oven (350 degrees F for approximately five to ten minutes. Once the baguette slices are toasted, place a spoonful of bruschetta on each slice and your antipasto is ready to be served. You can also leave the bruschetta in a bowl and serve it as a side with the bread. Buon appetito!
