Gnocchi

Gnocchi is my favorite kind of pasta because it has a lot of flavor to it and doesn’t taste like your typical pasta. Although one would think that it is complicated to make because it tastes so good, it is actually very simple and quick to make.

Ingredients:

250 grams of Ricotta Cheese

One egg and one egg yolk

1/4 teaspoon of salt

1/4 teaspoon of black pepper

3/4 cup of Parmesan cheese

3/4 cup all purpose white flour (keep additional flour on the side)

A pot of hot water

Three tablespoons of butter

Three tablespoons of sage

One table spoon of Italian herbs

To make the pasta, whisk together the egg, egg yolk, salt and pepper. Once mixed together, add the flour to the mixture along with the parmesan and ricotta cheese and mix everything together until it becomes into a dough mixture. Add additional flour as needed (one tablespoon at a time) to make the dough into a hard, non- stick mixture. Once you have the dough mixture, roll it out and cute it into cubed pieces. Add the dough pieces into the boiling pot of hot water. Let the pasta bowl for about 3 minutes until the gnocchi rises up to the top of the pot and then strain the water out.

For the sauce heat up the butter in a large frying pan and add the sage and Italian herbs to it and mix it together. Add the Gnocchi into sauce mixture and let it heat in the pan for about two minutes to make the pasta a little crispy. Mix the sauce and pasta well together and your dish is ready to eat.
